Maple-Roasted Brussels Sprouts with Cranberries and Pecans

Ingredients:

  • 1 lb Brussels sprouts, trimmed and halved
  • 1/2 cup fresh cranberries
  • 1/2 cup pecans, roughly chopped
  • 2 tablespoons olive oil
  • 2 tablespoons pure maple syrup
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions:

  1. Preheat and Prepare: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Prep Brussels Sprouts: Trim the ends of the Brussels sprouts and cut them in half. Place them in a large mixing bowl.
  3. Add Cranberries and Pecans: Toss fresh cranberries and chopped pecans into the bowl with the Brussels sprouts. The combination of tart cranberries and nutty pecans adds a burst of flavor and texture.
  4. Whisk the Dressing: In a small bowl, whisk together olive oil, maple syrup, balsamic vinegar, Dijon mustard, salt, and pepper. This flavorful dressing will enhance the natural sweetness of the Brussels sprouts.
  5. Coat and Toss: Drizzle the dressing over the Brussels sprouts, cranberries, and pecans. Toss everything together until well coated, ensuring each piece is infused with the delicious maple-balsamic flavor.
  6. Spread on Baking Sheet: Spread the coated Brussels sprouts mixture evenly on the prepared baking sheet, arranging them in a single layer. This ensures that they roast evenly and develop a beautiful caramelization.
  7. Roast to Perfection: Place the baking sheet in the preheated oven and roast for 20-25 minutes or until the Brussels sprouts are golden brown and crispy on the edges. Make sure to toss the mixture halfway through to ensure even cooking.
  8. Serve and Enjoy: Once roasted to perfection, transfer the Maple-Roasted Brussels Sprouts with Cranberries and Pecans to a serving dish. Garnish with additional chopped pecans if desired. Serve warm and watch this vibrant side dish become a Thanksgiving favorite!

This delightful side dish combines the earthy goodness of Brussels sprouts with the sweetness of cranberries and the crunch of pecans, creating a harmonious medley of flavors that will complement any Thanksgiving feast. Enjoy!

Herb-Roasted Turkey with Cranberry-Orange Glaze

Ingredients:

Turkey:

  • 1 whole turkey (12-14 pounds), thawed if frozen
  • 1 cup unsalted butter, softened
  • 3 tablespoons fresh sage, finely chopped
  • 3 tablespoons fresh rosemary, finely chopped
  • 3 tablespoons fresh thyme, finely chopped
  • Salt and pepper to taste
  • 1 onion, quartered
  • 1 lemon, halved
  • 4 cloves garlic, peeled

Cranberry-Orange Glaze:

  • 1 cup cranberry sauce (homemade or store-bought)
  • 1/2 cup orange juice
  • 1/4 cup honey
  • 2 tablespoons Dijon mustard
  • Zest of one orange

Gravy:

  • Pan drippings from the roasted turkey
  • 1/2 cup all-purpose flour
  • 4 cups turkey or chicken broth
  • Salt and pepper to taste

Instructions:

  1. Preheat and Prep: Preheat your oven to 325°F (163°C). Remove the giblets from the turkey cavity, rinse the turkey inside and out, and pat it dry with paper towels.
  2. Herb Butter Rub: In a small bowl, mix together the softened butter, chopped sage, rosemary, and thyme. Season the mixture with salt and pepper.
  3. Prepare the Turkey: Gently lift the skin of the turkey and rub half of the herb butter mixture directly onto the turkey breast. Rub the remaining mixture over the entire surface of the turkey. Sprinkle additional salt and pepper over the exterior.
  4. Stuff and Truss: Place quartered onion, lemon halves, and garlic cloves inside the turkey cavity. Truss the turkey using kitchen twine to secure the legs and keep the shape.
  5. Cranberry-Orange Glaze: In a small saucepan, combine cranberry sauce, orange juice, honey, Dijon mustard, and orange zest. Bring to a simmer over medium heat, stirring occasionally. Reduce heat and let it simmer for 5-7 minutes until it thickens slightly. Set aside.
  6. Roast the Turkey: Place the prepared turkey on a rack in a roasting pan. Roast in the preheated oven for about 15 minutes per pound, or until the internal temperature reaches 165°F (74°C) in the thickest part of the turkey.
  7. Glaze the Turkey: During the last 30 minutes of roasting, baste the turkey with the cranberry-orange glaze every 10 minutes, creating a flavorful, glossy finish.
  8. Rest and Carve: Once the turkey is cooked, let it rest for at least 20 minutes before carving. This allows the juices to redistribute, ensuring a moist and flavorful bird.
  9. Make Gravy: While the turkey rests, pour the pan drippings into a saucepan. In a separate bowl, whisk together flour and a cup of broth until smooth. Gradually whisk the flour mixture into the pan drippings, adding the remaining broth. Cook over medium heat, stirring constantly, until the gravy thickens. Season with salt and pepper to taste.
  10. Serve and Enjoy: Carve the turkey, drizzle with additional cranberry-orange glaze if desired, and serve with the savory herb-infused gravy.

This Herb-Roasted Turkey with Cranberry-Orange Glaze is a show-stopping centerpiece for your Thanksgiving feast, combining the classic flavors of herbs, citrus, and cranberries to create a memorable and delicious entree.
